COFFEE HUNTERS STORY

Ricardo, the owner of Kotowa Estate, started a new challenge by producing coffee utilizing “wine processing” method. The plot “Duncan” was selected for the wine-processing method, and it is blessed with a unique microclimate located at the most eastern slope of Volcan Baru. Close to America’ s Continental Divide, the plot “Duncan” has lower temperatures at night compared to others at the same elevation, experiencing greater temperature differences between day and night. In addition, the plot has less precipitation and is prone to be dry. In this plot, Ricardo planted Caturra, a cultivar that is more resistant to dryness by spreading deep roots. In order to implement the wine processing, the coffee cherries have to be ripened into full maturity before harvest. Then the coffee cherries are dried in the shade for a few days before being put inside a specially designed drying machine where dehumidified air with controlled temperature circulates. In this way, the moisture is taken out of the coffee without raising the temperature, making the saccharinity of the coffee cherries condense. Therefore, coffee with a flavor beyond description is produced.

2021

The richness of this dense coffee enhances over time. The characteristic flavor reminiscent of red wine, whiskey, plum wine, and rum raisin blends perfectly with the chocolaty base. A glossy acidity adds a touch of elegance, leading to a lingering robust and sweet sensation.

2020

This is one of the most full-bodied coffees of our brands. The juicy mouthfeel of plum wine and rich sweetness of dried fruits excitingly yields a wave of flavors resembling liqueur, cheese, spices, and colorful fruits. Each eccentric element combines to form a unique masterpiece. essence of the refined washed geisha exudes a timeless euphoria.

2019

It features the scent of chocolate fondant and orange. A cool and fresh acidity is reminiscent of early summer in the Alps. The toastiness of cookies and caramel are overlaid on it. The mild, transparent, and smooth texture lingers in the palate. While the gentle aftertaste momentarily impresses its fragileness, it is suddenly taken over by a mature, astringent tastiness thus revealing the Kotowa Estate’ s mastery.

2018

With an aroma like a violet flower, it has the condensed sweetness of cooked apples and dried persimmons. It has a full, natural flavor with a heavenly sophistication.

2017

Profound flavor resembling an aged sherry, plum wine, and savarin cake. The acidity has a nuance of dried raisins and aged balsamic. The thick texture and sweetness remain in the mouthfeel with lingering aftertaste.
